Restaurant KOT system: stop lost orders and kitchen leakage
Why a locked kitchen order ticket protects your profit, and how to run tables, kitchen screens and bills without arguments.
· 2 min read
A KOT (kitchen order ticket) tells the kitchen what to cook. In many restaurants it is also where money quietly disappears: an item is cooked and served, then removed from the bill before payment.
The KOT lock
Once a KOT is printed, its items cannot be changed or deleted from the bill. Waiters can still add new items. Removing a cooked item needs a manager PIN and a reason, and the owner gets an alert. Every change is kept in the audit log.
Kitchen screens instead of paper
A kitchen display shows tickets by age: green, then amber after the prep time, then red. Cooks tap an item to mark it cooking or ready; waiters see "ready" on their phones and serve.
Tables, guests and split bills
Reprints and cancellations are visible
A reprinted KOT prints "REPRINT" and is logged. Orders cancelled after the kitchen got them show up in the owner's alerts, so patterns are easy to spot.
What owners see
Daily sales by table and waiter, items cancelled after KOT, average time from order to serve, and the busiest hours — on the owner's phone.
Biznso includes the waiter app, kitchen display, KOT printing on station printers and the KOT lock in every plan with the restaurant module.
